2 Ingredient Pumpkin Cookies

Ok, 3 ingredients, (I insist you use chocolate chips also!) This is the perfect  "go-to" recipe when you need to bring a treat at the last minute to a pot luck or school or anytime! Jan's Tip: Grab the ingredients  for these cookies the next time you go shopping. I promise some time between now and the end of the year, you'll find a reason to make them.
2 Ingredient Pumpkin Cookies

1 box spice cake mix
1 15 oz. can pumpkin (NOT PUMPKIN PIE MIX!)
 Optional:  1 cup chocolate chips,
                  1 can cream cheese frosting

Preheat oven to 350 degrees.
 Lightly grease baking pans or line with parchment paper.
 In mixing bowl, mix together cake mix and pumpkin (and choc.chips if using them)
 Drop by tablespoons onto lightly greased baking sheet.
Bake 10-12 minutes.

 I like to give them a small "kiss" of cream cheese frosting to top them off, but it is optional.


  1. Yummy! I used chopped pecans instead of chocolate chips. I made up a batch of homemade spice cake mix instead of a store bought one. And slathered on some homemade cream cheese frosting from a cake I made a few days ago. Oh my goodness! So good! I think I'd call them muffin bites rather than cookies as the texture is so cakey. Thank you for posting the recipe.

    1. Ummm.. Yum! Yours sound so delish! This recipe is very cakey, but gives you a such a yummy touch of fall, but in a quick and easy recipe. Thanks for sharing your recipe ideas with us! I love them!
